Grown high in Dipilto, on land that was a pine plantation before it was a coffee farm. Mario Gonzalez never cleared all the shade trees, so the cherries ripen slowly under them, and he ferments this lot whole in sealed tanks for days before washing it clean. That's where the fruit comes from: crisp apple, ripe guava, and a coconut candy sweetness that lingers through the finish. It's Parainema, a variety most farms plant because it resists disease, not because it tastes good. This one does both.

When was my coffee roasted?

Freshness is our priority. Most beans are roasted within 3 days of your order. Every bag includes an information card detailing its specific roast date.

How long should I let the beans rest (degas)?

For the best flavor outcome and structural clarity, we recommend resting your beans for 7 days from the roast date before brewing. This allows the CO2 to escape, ensuring a balanced extraction.

How should I store my coffee?

To preserve the technical profile of our roasts, store beans in a cool, dark place in an airtight container. Avoid the fridge or freezer, as moisture and odors can compromise the delicate aromatics of specialty coffee.

Do you offer wholesale for cafes or offices?
